Lemon cream meringues
A simple and delicious recipe. You only need very few ingredients and it only takes a couple of minutes to prepare.
Ingredients
Double cream
Icing sugar
Juice and zest of a lemon
Limoncello liqueur (optional)
Meringue nests
Method
- Whisk the double cream, then whisk in the icing sugar.
- Add the lemon zest (reserving some for decoration) and limoncello (if using).
- Whisk continually while adding lemon juice. This will thicken the cream.
- Top the meringue nests with the lemon cream and serve decorated with the reserved lemon zest.
