Lemon cream meringues

A simple and delicious recipe. You only need very few ingredients and it only takes a couple of minutes to prepare.

Ingredients

Double cream
Icing sugar
Juice and zest of a lemon
Limoncello liqueur (optional)
Meringue nests

Method

  1. Whisk the double cream, then whisk in the icing sugar.
  2. Add the lemon zest (reserving some for decoration) and limoncello (if using).
  3. Whisk continually while adding lemon juice. This will thicken the cream.
  4. Top the meringue nests with the lemon cream and serve decorated with the reserved lemon zest.
