"Power Bar" fruity, seedy, nutty flapjacks

The basic flapjack recipe can be infinitely varied with the addition of your choice of dried fruit, nuts and seeds to make a healthy, energy-boosting snack.

Ingredients

Basic flapjack mix
3 oz margarine
1 tbsp golden syrup
1 tbsp honey
3 oz sugar
5 oz porridge oats

Power bar variants

  1. Replace part of the porridge oats with fruit and nut muesli (crush any large nuts with a pastle and mortar).
  2. dried fruits: try figs, apricots, glacé cherries, raisins, mixed dried fruit packs, banana chips (crushed)...
  3. seeds: try sesame, sunflower, poppy...
  4. nuts: flaked almonds, walnuts, hazels, brazils...
  5. spice it up with ground ginger, cinnamon and nutmeg...


Method


  1. Crush nuts and any larger seeds in a pestle and mortar.
  2. Melt the margarine and syrup in a pan. Mix in the sugar, stirring until it melts.
  3. Mix the dry ingredients together well, then add to the syrup mixture and mix well.
  4. Spread in a greased tin and bake at 160° C for about 10 mins.
