Stir-fried Orange and Ginger Chicken

Serves 2. An even quicker to prepare variation of my original recipe for Chicken with Orange and Ginger. Serve this with Oriental Vegetable Rice.

Ingredients

2 chicken breasts
plain flour
ground ginger
1 tbsp golden syrup
1 inch piece fresh root ginger, grated
zest of one orange
juice of 2 large oranges

Method

  1. Chop the chicken breasts into small pieces of roughly equal size.
  2. Mix the flour and ground ginger. Cover the chicken pieces in this mix.
  3. Stir-fry the chicken for a few minutes until cooked through.
  4. Add the orange zest, grated ginger, golden syrup and orange juice. Cook for about 1 minute until the sauce is reduced, then serve.
