Chicken with Orange and Ginger

A simple, quick and tasty meal for one.

Ingredients

2 oranges
½ tsp ground ginger
flour and salt
2 chicken thighs
100 ml cider / apple juic + white wine
1 dessertspoon golden syrup
grated root ginger

Method


  1. Reserve the zest from one orange. Cut a couple of thin slices from the orange and reserve for garnish. Juice the oranges.
  2. Mix the flour with the seasoning and ground ginger and use this mixture to coat the chicken.
  3. Brown the chicken all over in a large frying pan.
  4. Add the syrup, the juice and zest of one orange, the cider (or apple juice and white wine) and the fresh grated ginger.
  5. Bring to the boil, cover and simmer for 15-20 mins until the chicken is tender. Add the juice of the second orange as necessary if the sauce reduces too quickly.
  6. Serve the chicken with the sauce poured over and garnished with the reserved orange slices.
