Chicken with Orange and Ginger
A simple, quick and tasty meal for one.
Ingredients
2 oranges
½ tsp ground ginger
flour and salt
2 chicken thighs
100 ml cider / apple juic + white wine
1 dessertspoon golden syrup
grated root ginger
Method
- Reserve the zest from one orange. Cut a couple of thin slices from the orange and reserve for garnish. Juice the oranges.
- Mix the flour with the seasoning and ground ginger and use this mixture to coat the chicken.
- Brown the chicken all over in a large frying pan.
- Add the syrup, the juice and zest of one orange, the cider (or apple juice and white wine) and the fresh grated ginger.
- Bring to the boil, cover and simmer for 15-20 mins until the chicken is tender. Add the juice of the second orange as necessary if the sauce reduces too quickly.
- Serve the chicken with the sauce poured over and garnished with the reserved orange slices.
