Parmesan Fish Fillets
A simple and tasty supper - the parmesan and chilli flakes make all the difference and so it's very moreish! It only takes about 5-10 minutes for quick fresh food (so there's no excuse not to cook!) and it tastes delicious. Serve it with a simple green salad.
Ingredients
Skinned white fish fillets
Flour
1 egg, beaten
freshly grated parmesan
chilli flakes
light olive oil
salt and pepper
Method
- Season the flour with the salt and pepper.
- Dust the skinned fish fillets with the seasoned flour.
- Dip in the beaten egg.
- Press into the freshly grated parmesan - cover the fillets well.
- Heat a frying pan - make it very hot before adding some light olive oil.
- Fry the fillets for a couple of minutes on each side until golden brown.
- Throw in some chilli flakes just before you finish cooking.
